tuesday meal (again) #4

i’m thinking of changing the title of monday meals to weekly meals. haha  i always seem to have something going on, on mondays!  last night was not an exception- i worked the dreaded overnight shift at work….and it was ok.  i was however feeling like i was drunk for the first hour after waking up at 2pm today, but that’s cool.

today’s meal is according to the kraft website,  budget wi$e.  and for the most part it was.  again, i chose an easy recipe.

oh wait- i’m watching the office, and the one where dwight creates a  fake fire is on- who has seen it? for reals it’s the funniest thing on tv i’ve ever seen!

ok, i digress. back to the meal!

i decided to do a foil pack meal… where you basically throw everything in a foil pack, and bake it in the oven.  never done one before, and thought it looked neat.  i will link the recipe below in case you want to attempt it yourself as well.

it’s basically chicken, rice, artichoke, tomatoes, pesto, and italian dressing.  honestly, it was mega easy.  you really just throw the rice, chicken, artichoke, and tomatoes into a foil piece for each serving, and combing the dressing and pesto, and pour it onto each serving.  that my friends didn’t look appetizing, but what raw food does?  am i right?

once it’s all in the pack, you fold it up, leaving room for “circulation”?!, then 35 minutes later you take it out of the oven.

OH- i almost forgot!  i found that i have learned something from making these weekly meals- never over fill whatever you are making!  when i started wrapping up the first pack, i realized it was too full, and it started leaking everywhere.  instead of just dabbing it up, and cooking anyways, i repacked it so it wouldn’t F-up the oven again.  yea to learning something this week! 😛

booya.  dinner done.

conclusion:   tastes pretty good.  the clean up was definitely easy, as there were really no dishes to clean up.  it did taste a little tangy almost, which could have come from a number of ingredients- the pesto, the artichokes, or the fact that the tomatoes were marinated in garlic.  over all great, but i think i would go with another kind of flavour next time.

wedding wednesday #3

45 days and couting until the big day!

while we’re waiting for it to arrive, i’ve got lots to do.  for starters, i’m in a wedding this weekend, which i am so excited for!  my friend sandra also did lots of diy touches, so i’ll be sure to add pics from her day on here next week.

we’ve also got meetings galore with our vendors to finalize all the little details.  on top of those things, i’ve got all the little diy projects i’ve imagined in my head, but haven’t started. sigh.

i can tell you that we do have 97% of the materials we need to do our centre pieces, which is pretty exciting!  the only thing i am not 100% that we have is soil.  we have the containers, the wheat seed, and that’s it.  and Alisa did start a test plot, so we kind of know what to expect- which is great! 🙂

so that’s exciting!  and that WAS mission #1 if i’m not mistaken, so mission #1 is well on it’s way.  on monday when we’re back in the l.dot we’ll plant a couple to make sure all goes without a hitch.

well folks, it’s 11:03 pm, my head is pounding, and my eyes are straining.  so sadly, this wedding wednesday has come to a close.  hopefully i’ll have a couple big posts next week for y’all.

monday/tuesday meal #3

what it SHOULD look like

there’s a reason they create recipes.  i think it must be so the people who don’t know how to cook, can actually create something somewhat edible.  right?

i learned 2 major things from attempting this week’s meal- 1. try to follow the recipe.  if they say melt the cheese, THEN add in other mixture, there’s probably a reason for it, and 2. cheese sauce is hard to make.

for this week’s meal I chose to do a kraft cooking with philly recipe!  “Creamy PHILLY pesto chicken”, with baked green beans.  Again, not a lot of ingredients, not a huge cook time, so it looked pretty easy.  and essentially it was.

you take your chicken, and you cook it up in a frying pan until done.  easy.

next you are supposed to take the cream cheese and cook it on medium heat until melted.  surprisingly enough, it takes a little while for it to actually melt.  first it got kind of gloopy, and it stuck to my spoon quite a bit.  i got tired of waiting for the cream cheese to melt, so i threw in the next ingredients right away.  and so the not following the recipe begins.

i added the pesto, and broth all together with the clumpy cheese, and stirred.  i stopped stirring a couple of times to talk to matt, and to take pictures, and realized i should have been whisking instead of stirring.  does it make a difference i wondered?  who knows.  i do know however, that it wasn’t really a sauce as much as it was a clumpy stew-like mess.  realizing it wasn’t really as saucy as it should be, i added more broth.  did that help?  not really.  it evaporated pretty quickly…and i swear i had it on low- not even medium!

anyways, let’s talk about the green beans.  they were super easy.  like really really easy.  and for this, i didn’t follow a recipe at all, i just threw them in a dish, put some oil on them, seasoning, lemon juice, then baked them for a half hour or so.  they turned out really good.  oh, i also sprinkled some bread crumbs on the top hoping to add a bit of a crunchy crust, but i didn’t put enough on it.  they turned out really well anyways!

so, chicken with clumpy cheese topping, and baked green beans in oil, seasoning and lemon juice.  great tuesday meal if i do say so myself! 🙂

ok blue jays let’s play ball!

circa nineteen ninety-something!

the summer is winding down (sadly!), and i’m getting busier and busier trying to jam in friend time, and wedding time.  monday meals is again going to have to wait until tomorrow, as i’m off to see the jays cream the yankees tonight! (that’s right heather, you heard me!) 

haven’t 100% decided what to make yet, but it might be something easier than the last 2 weeks….and with less mess- which i know matt will appreciate.

wedding wednesday #3

ok, here is my finished product for the banner i was making…. i couldn’t show you before because it was for a bachelorette party for one of my bridesmaids sandra- but here it is!  i was quite please if i do say so myself.

on to my next project!

so, i was going to blog this week about my table chart, BUT after going to ikea with kathy on sunday (ps never go to ikea on sundays!), kathy found some super neat picture frames that we’re going to use to display our menus.  i’m pretty torn right now about posting a picture of them though- i love blogging about everything, but then people won’t be surprised on october 9th!!!

so, i’m going to take a little poll, for any of you that are reading….

would you rather see all the wedding details on here, or wait until the actual wedding and see it all together?!  that being said, you’re probably wondering what i would blog about if i wasn’t going to show what i’m working on?  i think i would be able to do it without giving everything away… unless you want me to give up all my ideas?! 😛

ok, so back to the picture frames.  i love them!  so what i need to do now is decide what colour paper to display the menus on, and how i’m going to get the menus on the paper.  should i get it printed, or write it on myself?  i do have pretty awesome writing if i do say so myself!  haha  i was pretty set on using different patterns and coloured paper for each frame, with the menus printed in black, but i saw a picture of menus done up yesterday, and i think i might just change my mind.  what is the new idea?  i think that’s my little secret.  for now.

tuesday meal…still in progress.

things i have learned from making quiche:

1. make sure your pie plate fits the ready-made pie crust you bought from the grocery store

2. onions can actually make you “cry”

3. make sure you don’t put too much milk/egg mixture in your pie crust, unless you are looking forward to cleaning your oven the next day

4.  what exactly a sauce pan is

sigh.  (is it just me, or is that how i start out most of my posts?!)

alright, so i worked until 10 last night, which is why monday meals is on tuesday this week.  i started pretty late tonight, and as of 10pm, the quiche is still baking! (i started an hour and a half ago!)

i actually followed a recipe this week, which is linked below.  pretty easy instructions, pretty simple ingredients.  broccoli, cheese, milk, onion, garlic, butter and eggs.  simple enough no?

so i basically grabbed a sauce pan (for those of you that don’t know- a sauce pan is kind of like a frying pan, but wil higher edges.  i did not know that before!), and put butter, onions and garlic in it.  pretty soon, the kitchen smelled great.  next went the broccoli.  still smelling good!

next i put the store-bought pie crust into the only empty pie plate i could find; my usual was already in use with cheesecake from the weekend!  it was clear that the pie crust was too big for the plate.  so i just pushed it in.  problem solved.  after the broccoli mixture had cooked a bit i poured it into the pie crust.  next i mixed eggs, and milk together with a whisk (who knew i would use it so much eh Lyndsay?!).  my next step is where all my problems started.

so when i pushed in the pie crust to fit the pie plate it didn’t really occur to me that i would probably need to adjust the amount of egg mixture going in.  i emptied the whole mixture into the pie crust, and immediately there was a flood!  egg was friggen everywhere.  i went through like half a paper towel roll, no exaggeration.  i tried to drain stuff out, but didn’t want to lose any cheese!

so when i thought i had it under control, i picked it up and put it in the oven.  5 minutes later i went to check to see what it was doing… egg flood all over the bottom of the oven.  like all over the oven.  did i take it out?  nope.  i just left it to bake. 🙂

i guess the oven could have used a good scrub anyways...

so 30 minutes later, it’s clearly still not ready (directions said to cook for 30 minutes or until centre is set).  so i left it for another 5, then another 5, then another….you get where i’m going here.  the pie crust was brown, but the middle was still a little watery!  tip for those thinking they will attempt it in the future- maybe don’t use skim milk?!  also, make sure you don’t over fill your pie crust!  the stupid thing baked for about an hour, before i had to take it out so the crust wouldn’t burn.  as of right now i still haven’t eaten anything- its cooling.  it’s also 10:14pm.  what did matt have for dinner you ask?  cinnamon toast crunch.  he’s also already in bed.

personally it still smells super good, so i am still excited to eat it, but i’m not expecting anything spectacular.

monday meals #2:  meh.  i’ll let you know how it actually tasted as soon as i get to eat it!

UPDATE: the quiche is a little moist still, but great!  pretty flavourful 🙂

wedding wednesdays take 2…

my "craft" table

sigh.

in case you haven’t noticed that is our ping pong table in the basement.  we’re definitely getting our money out of it! ha it became my scrapbooking table at the beginning of the summer, and has recently surrendered into becoming my “craft” table.  if you’ve been to our house, you’re probably saying right now “but 642 percy is a mansion- why does she need to spread all her junk on the ping pong table?”  well the answer my friends is two fold, 1. our house is not actually a mansion, and 2. from the craft table i can watch tv at the same time 🙂 yay!

sooooooooooooo, last week i had begun a super cute banner.  well, shocker here- i’m still working on it!  i’m a busy girl, and frankly i kind of forgot i wasn’t done!  don’t fret though, all the letters are FINALLY cut out, and tomorrow night i will be stringing them all together!  i will post a finished picture on the weekend…. all i can show now is how messy my craft space is.  again, shocker that it’s such a disaster i know!

mission #5:  still on going!

next wednesday i’ll be starting my seating chart thing where people will see what table number they are sitting at! 🙂  i just decided this week what i was doing, and i can’t wait to get started!
